Ingredients

  • 2 cups rolled oats
  • 2 cups milk or almond milk
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 ripe bananas sliced
  • 1/2 cup nuts walnuts or pecans
  • 1/2 cup dried fruits raisins or cranberries
  • 1 teaspoon baking powder

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and salt.
  • In another bowl, whisk together milk, maple syrup, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until well combined.
  • Fold in the sliced bananas, nuts, and dried fruits.
  • Grease a baking dish with cooking spray or butter.
  • Pour the oatmeal mixture into the prepared baking dish.
  • Spread the mixture evenly and press it down gently.
  • Bake in the preheated oven for 30-35 minutes or until the top is golden brown.
  • Allow to cool slightly before serving. Enjoy warm!
