Wash and slice the zucchinis in half lengthwise.
Scoop out the center of each zucchini half using a spoon.
In a bowl, mix breadcrumbs, Parmesan cheese, minced garlic, salt, and pepper.
Stir in olive oil and fresh herbs until combined.
Fill each zucchini half with the breadcrumb mixture.
Place the stuffed zucchinis on a baking sheet lined with parchment paper.
Drizzle a little olive oil on top for extra crispiness.
Bake for 25 minutes or until golden brown.
Let cool for a few minutes before serving.
