Ingredients

  • 4 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh herbs like thyme or basil
  • Optional: red pepper flakes for heat

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and slice the zucchinis in half lengthwise.
  • Scoop out the center of each zucchini half using a spoon.
  • In a bowl, mix breadcrumbs, Parmesan cheese, minced garlic, salt, and pepper.
  • Stir in olive oil and fresh herbs until combined.
  • Fill each zucchini half with the breadcrumb mixture.
  • Place the stuffed zucchinis on a baking sheet lined with parchment paper.
  • Drizzle a little olive oil on top for extra crispiness.
  • Bake for 25 minutes or until golden brown.
  • Let cool for a few minutes before serving.
