Preheat your oven to 350°F (175°C).
Chop the mixed nuts finely and mix them with ground cinnamon.
Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.
Brush a 9x13 inch baking dish with melted butter.
Layer 8 sheets of phyllo dough, brushing each layer with melted butter.
Spread a thin layer of the nut mixture on top of the phyllo dough.
Repeat layering phyllo dough and nut mixture, ending with 8 layers of phyllo on top.
Cut the baklava into diamond or square shapes before baking.
Bake for 45 minutes or until golden brown.
While baklava is baking, combine sugar, water, honey, and vanilla in a saucepan. Boil for 10 minutes.
Pour the syrup over the baklava as soon as it comes out of the oven.
