Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup balsamic vinegar
  • 1/4 cup honey
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish
  • Optional: vegetables for roasting

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix balsamic vinegar, honey, minced garlic, olive oil, salt, and pepper.
  • Place the chicken breasts in a baking dish.
  • Pour the balsamic mixture over the chicken, ensuring they are well coated.
  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
  • Baste the chicken with the sauce halfway through cooking for added flavor.
  • If using, add chopped vegetables around the chicken in the last 10 minutes of baking.
  • Once cooked, remove the chicken from the oven and let it rest for a few minutes.
  • Drizzle additional balsamic glaze over the chicken before serving.
  • Garnish with fresh thyme and serve warm.
