Stir in diced bell peppers, cumin, chili powder, salt, and pepper.
Pour in half of the enchilada sauce and mix well.
Warm the tortillas in a separate pan or microwave until pliable.
Spoon the beef mixture into each tortilla and roll them up tightly.
Place the rolled tortillas in a baking dish seam-side down.
Pour the remaining enchilada sauce over the top and sprinkle with cheese.
Bake for 20 minutes or until the cheese is bubbly and golden.
