Ingredients

  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup bell peppers diced
  • 1 can 10 oz enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, brown the ground beef over medium heat.
  • Add chopped onion and minced garlic; sauté until onions are translucent.
  • Stir in diced bell peppers, cumin, chili powder, salt, and pepper.
  • Pour in half of the enchilada sauce and mix well.
  • Warm the tortillas in a separate pan or microwave until pliable.
  • Spoon the beef mixture into each tortilla and roll them up tightly.
  • Place the rolled tortillas in a baking dish seam-side down.
  • Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  • Bake for 20 minutes or until the cheese is bubbly and golden.
