Ingredients

  • 2 cups shredded beef
  • 1 cup red enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat.
  • Add chopped onions and sauté until translucent.
  • Mix in shredded beef, cumin, garlic powder, salt, and pepper.
  • Warm the tortillas in a separate pan until soft.
  • Spread some beef mixture in the center of each tortilla.
  • Roll the tortillas tightly and place them seam side down in a baking dish.
  • Pour red enchilada sauce over the rolled tortillas.
  • Sprinkle shredded cheese on top.
  • Bake for 20 minutes until the cheese is bubbly.
