Preheat your oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat.
Add chopped onions and sauté until translucent.
Mix in shredded beef, cumin, garlic powder, salt, and pepper.
Warm the tortillas in a separate pan until soft.
Spread some beef mixture in the center of each tortilla.
Roll the tortillas tightly and place them seam side down in a baking dish.
Pour red enchilada sauce over the rolled tortillas.
Sprinkle shredded cheese on top.
Bake for 20 minutes until the cheese is bubbly.
