Ingredients

  • 3-4 lbs beef roast chuck or ribeye
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup red wine optional
  • Assorted vegetables carrots, potatoes, onions

Instructions

  • Preheat your oven to 350°F (175°C).
  • Season the beef roast with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the roast on all sides until browned (about 3-4 minutes each side).
  • Remove the roast and place it in a roasting pan.
  • In the same skillet, add garlic, rosemary, and thyme, sautéing for 1 minute.
  • Pour in the beef broth and red wine (if using), scraping up any browned bits.
  • Pour this mixture over the beef roast in the roasting pan.
  • Surround the roast with chopped vegetables.
  • Cover the pan with foil and roast in the oven for 2-3 hours, basting occasionally.
