In the same skillet, add garlic, rosemary, and thyme, sautéing for 1 minute.
Pour in the beef broth and red wine (if using), scraping up any browned bits.
Pour this mixture over the beef roast in the roasting pan.
Surround the roast with chopped vegetables.
Cover the pan with foil and roast in the oven for 2-3 hours, basting occasionally.
