Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup fresh blueberries
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Add the cold butter, mixing until the mixture resembles coarse crumbs.
  • Gently fold in the blueberries.
  • In a separate bowl, combine cream, egg, and vanilla extract.
  • Add the wet ingredients to the dry ingredients, stirring until just combined.
  • Turn the dough onto a floured surface and gently knead it a few times.
  • Pat the dough into a circle about 1-inch thick.
  • Cut the dough into 8 wedges and place them on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes or until golden brown. Allow to cool slightly before dusting with powdered sugar.
