Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 cup peanut butter
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 cup dark chocolate chips
  • 1/4 cup dried fruits raisins, cranberries
  • 1/4 cup nuts walnuts, almonds
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine rolled oats and almond flour.
  • Add honey or maple syrup and peanut butter to the dry ingredients.
  • Stir in baking soda and cinnamon until well mixed.
  • Add dark chocolate chips, dried fruits, and nuts, mixing thoroughly.
  • Using a tablespoon, scoop the dough onto the prepared baking sheet.
  • Flatten each cookie slightly with the back of the spoon.
  • Bake in the preheated oven for 12-15 minutes, or until golden brown.
  • Remove from the oven and let cool on the baking sheet for 5 minutes.
  • Transfer cookies to a wire rack to cool completely.
