Preheat your oven to 400°F (200°C).
In a small bowl, mix brown sugar, soy sauce, olive oil, garlic, pepper, salt, and paprika.
Heat a skillet over medium-high heat and add a little oil.
Sear the pork chops for 4-5 minutes on each side until golden brown.
Pour the brown sugar mixture over the pork chops.
Transfer the skillet to the preheated oven.
Bake for 10-12 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
Remove from the oven and let rest for 5 minutes.
Garnish with fresh herbs and lemon wedges.
