Ingredients

  • 1 cup cooked quinoa
  • 1/2 lb ground beef or turkey
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/2 cup shredded lettuce
  • 1/4 cup sliced pickles
  • 1/2 cup diced bell peppers
  • 1/4 cup shredded cheese optional
  • 1/4 cup burger sauce or ranch dressing
  • Salt and pepper to taste

Instructions

  • Cook the quinoa according to package instructions.
  • Brown the ground beef or turkey in a skillet over medium heat.
  • Season the meat with salt and pepper.
  • Prepare the vegetables: chop the lettuce, tomatoes, and bell peppers.
  • Drain excess fat from the cooked meat.
  • Layer 1/2 cup of quinoa in a bowl.
  • Add the cooked meat on top of the quinoa.
  • Arrange the diced tomatoes, lettuce, bell peppers, and red onion around the meat.
  • Drizzle with burger sauce or ranch dressing.
  • Top with sliced pickles and shredded cheese if desired.
