Ingredients

  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup cooked chicken shredded
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1 avocado sliced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Heat the tortillas in a skillet for about 30 seconds on each side.
  • In the center of each tortilla, layer 1/4 cup of rice.
  • Add 1/4 cup of black beans on top of the rice.
  • Place 1/4 cup of shredded chicken on the beans.
  • Sprinkle 1/4 cup of cheese over the chicken.
  • Add a spoonful of salsa and top with avocado slices.
  • Add a dollop of sour cream.
  • Fold the sides of the tortilla inwards, then roll it up tightly.
  • Serve with lime wedges and garnish with fresh cilantro.
