Ingredients

  • 2 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans rinsed and drained
  • 1 cup cooked and seasoned ground beef or chicken
  • 1/2 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup diced tomatoes
  • 1/2 cup lettuce shredded
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Optional: jalapeños avocado, cilantro

Instructions

  • Prepare the rice according to package instructions and set aside.
  • In a skillet, heat the seasoned meat until fully cooked.
  • Warm the flour tortillas in a separate pan or microwave for a few seconds.
  • Layer the cooked rice on the center of each tortilla.
  • Add the black beans on top of the rice.
  • Spoon the cooked meat over the beans.
  • Sprinkle shredded cheese evenly over the meat.
  • Add diced tomatoes and shredded lettuce.
  • Drizzle sour cream and salsa over the fillings.
  • Fold the sides of the tortilla over the filling and roll tightly from the bottom up.
