Preheat your oven to 425°F (220°C).
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the cold, cubed butter to the flour mixture.
Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
Make a well in the center and pour in the buttermilk.
Stir gently until just combined; do not overmix.
Turn the dough onto a floured surface and knead gently 2-3 times.
Pat the dough to about 1-inch thickness and cut out biscuits with a round cutter.
Place the biscuits on a baking sheet lined with parchment paper.
Bake for 15-20 minutes or until golden brown on top.
