Preheat your oven to 425°F (220°C) or prepare your grill.
Remove the leaves from the cauliflower and trim the stem.
Place the cauliflower head upside down on a cutting board.
Using a sharp knife, slice the cauliflower into 1-inch thick steaks.
Brush each steak with olive oil on both sides.
Sprinkle garlic powder, smoked paprika, salt, and pepper evenly over the steaks.
Place the cauliflower steaks on a baking sheet lined with parchment paper or directly on the grill.
Roast or grill the steaks for about 10-12 minutes per side, until golden brown and tender.
Remove from heat and let rest for a few minutes.
Garnish with fresh herbs and serve with your favorite sauce.
