Preheat your oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs and melted butter until well combined.
Press the mixture into the bottom of a greased 9x9 inch baking dish.
In a large mixing bowl, beat softened cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract and sour cream until fully incorporated.
Pour the cheesecake mixture over the crust in the baking dish.
Bake for 30 minutes or until the center is set.
Allow to cool at room temperature for 1 hour, then refrigerate for at least 4 hours.
Cut into bars and serve, optionally topped with fruit puree.
