Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 8 oz packages cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • Optional: fruit puree for topping

Instructions

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs and melted butter until well combined.
  • Press the mixture into the bottom of a greased 9x9 inch baking dish.
  • In a large mixing bowl, beat softened cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract and sour cream until fully incorporated.
  • Pour the cheesecake mixture over the crust in the baking dish.
  • Bake for 30 minutes or until the center is set.
  • Allow to cool at room temperature for 1 hour, then refrigerate for at least 4 hours.
  • Cut into bars and serve, optionally topped with fruit puree.
