Ingredients

  • 1 lb chicken thighs boneless and skinless
  • 1/2 lb smoked sausage sliced
  • 1/2 cup onion diced
  • 1/2 cup bell pepper diced
  • 1/2 cup celery diced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 2 cups okra sliced
  • 2 tbsp vegetable oil
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions

  • Heat vegetable oil in a large pot over medium heat.
  • Add diced onions, bell peppers, and celery; sauté until soft.
  • Stir in the garlic and cook for an additional minute.
  • Add the sliced sausage and chicken; brown for about 5-7 minutes.
  • Sprinkle Cajun seasoning, salt, and pepper; mix well.
  • Pour in the chicken broth; bring to a boil.
  • Reduce heat and let simmer for 30 minutes.
  • Add okra and continue to simmer for another 15 minutes.
  • Adjust seasoning to taste.
  • Serve over cooked white rice.
