Rinse the whole chicken under cold water.
Place the chicken in a large pot and cover it with water.
Add chopped carrots, celery, onion, garlic, and bay leaf.
Bring to a boil over medium-high heat.
Skim off any foam that forms on the surface.
Reduce heat to low and cover; simmer for 1.5 to 2 hours.
Remove the chicken and set aside to cool.
Strain the broth through a fine-mesh sieve.
Season the broth with salt and pepper to taste.
Serve hot or use as a base for other dishes.
