Ingredients

  • 1 whole chicken about 3-4 lbs
  • 2 large carrots chopped
  • 3 celery stalks chopped
  • 1 onion quartered
  • 4 garlic cloves smashed
  • 1 bay leaf
  • 10 cups water
  • Salt and pepper to taste
  • Fresh herbs parsley, thyme

Instructions

  • Rinse the whole chicken under cold water.
  • Place the chicken in a large pot and cover it with water.
  • Add chopped carrots, celery, onion, garlic, and bay leaf.
  • Bring to a boil over medium-high heat.
  • Skim off any foam that forms on the surface.
  • Reduce heat to low and cover; simmer for 1.5 to 2 hours.
  • Remove the chicken and set aside to cool.
  • Strain the broth through a fine-mesh sieve.
  • Season the broth with salt and pepper to taste.
  • Serve hot or use as a base for other dishes.
