Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz pinto beans, rinsed and drained
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 1 cup bell peppers chopped
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Begin by dicing the bell peppers and onion.
  • Mince the garlic cloves.
  • Place the chicken breasts at the bottom of the crockpot.
  • Add the chopped vegetables on top of the chicken.
  • Pour in the canned beans and diced tomatoes.
  • Sprinkle chili powder, cumin, salt, and pepper over the mixture.
  • Stir gently to combine all ingredients.
  • Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken using two forks directly in the crockpot.
  • Stir the chili to mix the shredded chicken and serve hot, garnished with fresh cilantro.
