Ingredients

  • 4 chicken thighs or breasts
  • 2 cups of diced carrots
  • 1 cup of chopped onions
  • 4 cloves of garlic minced
  • 2 cups of chicken broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Season the chicken with salt, pepper, paprika, and thyme.
  • Heat olive oil in a skillet over medium heat and sear the chicken for 3-4 minutes on each side.
  • Transfer the chicken to the crockpot.
  • Add diced carrots, chopped onions, and minced garlic around the chicken.
  • Pour chicken broth over the ingredients in the crockpot.
  • Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken using two forks.
  • Stir the mixture to combine flavors and return to low heat for an additional 30 minutes.
  • Serve hot, garnished with fresh parsley.
