Ingredients

  • 1 lb chicken breast cut into 1-inch cubes
  • 1 bell pepper cut into squares
  • 1 onion cut into wedges
  • 1 zucchini sliced
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  • Preheat the grill to medium-high heat.
  • In a bowl, combine olive oil, soy sauce, lemon juice, garlic, paprika, salt, and pepper.
  • Add chicken cubes to the marinade and let sit for at least 15 minutes.
  • Thread chicken, bell pepper, onion, zucchini, and cherry tomatoes onto skewers.
  • Place the skewers on the grill.
  • Cook for 10-15 minutes, turning occasionally until chicken is cooked through.
  • Check that the chicken reaches 165°F.
  • Remove from grill and let rest for a few minutes.
  • Serve hot and enjoy!
