Preheat the grill to medium-high heat.
In a bowl, combine olive oil, soy sauce, lemon juice, garlic, paprika, salt, and pepper.
Add chicken cubes to the marinade and let sit for at least 15 minutes.
Thread chicken, bell pepper, onion, zucchini, and cherry tomatoes onto skewers.
Place the skewers on the grill.
Cook for 10-15 minutes, turning occasionally until chicken is cooked through.
Check that the chicken reaches 165°F.
Remove from grill and let rest for a few minutes.
Serve hot and enjoy!
