Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for frying
  • Lemon wedges for serving

Instructions

  • Pound the chicken breasts to an even thickness.
  • Season the flour with salt and pepper in a shallow dish.
  • Whisk the eggs in another bowl.
  • Combine breadcrumbs and Parmesan cheese in a third dish.
  • Dredge each chicken breast in flour, then dip in eggs, and finally coat with breadcrumbs.
  • Heat olive oil in a skillet over medium heat.
  • Fry the chicken breasts for 4-5 minutes on each side until golden brown.
  • Remove from skillet and let drain on paper towels.
  • Serve with lemon wedges.
