Ingredients

  • 1 lb boneless chicken breast sliced
  • 1 onion thinly sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 2 cups provolone cheese shredded
  • 4 hoagie rolls
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: hot sauce for serving

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced onions and bell peppers; sauté until softened, about 5 minutes.
  • Push vegetables to the side of the skillet.
  • Add sliced chicken; season with salt and pepper.
  • Cook chicken until golden brown, about 7-10 minutes.
  • Mix the chicken with the vegetables.
  • Sprinkle provolone cheese over the mixture.
  • Cover the skillet to melt the cheese, about 2-3 minutes.
  • Split hoagie rolls and toast if desired.
  • Spoon the chicken mixture into the hoagie rolls and serve hot.
