Heat olive oil in a large skillet over medium heat.
Add sliced onions and bell peppers; sauté until softened, about 5 minutes.
Push vegetables to the side of the skillet.
Add sliced chicken; season with salt and pepper.
Cook chicken until golden brown, about 7-10 minutes.
Mix the chicken with the vegetables.
Sprinkle provolone cheese over the mixture.
Cover the skillet to melt the cheese, about 2-3 minutes.
Split hoagie rolls and toast if desired.
Spoon the chicken mixture into the hoagie rolls and serve hot.
