Heat a skillet over medium heat and add olive oil.
Sauté the diced onions and bell peppers until soft.
In a bowl, mix shredded chicken with taco seasoning.
Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
Add a portion of the chicken mixture on top of the cheese.
Add sautéed vegetables on top of the chicken.
Sprinkle the remaining cheese over the filling.
Fold the tortilla in half and cook until golden brown.
Flip and cook the other side until crispy and cheese melts.
Remove from skillet and cut into wedges.
