Ingredients

  • 2 cups cooked chicken shredded
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 4 large flour tortillas
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 teaspoon taco seasoning
  • Olive oil for cooking
  • Salsa for serving
  • Sour cream for serving

Instructions

  • Heat a skillet over medium heat and add olive oil.
  • Sauté the diced onions and bell peppers until soft.
  • In a bowl, mix shredded chicken with taco seasoning.
  • Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  • Add a portion of the chicken mixture on top of the cheese.
  • Add sautéed vegetables on top of the chicken.
  • Sprinkle the remaining cheese over the filling.
  • Fold the tortilla in half and cook until golden brown.
  • Flip and cook the other side until crispy and cheese melts.
  • Remove from skillet and cut into wedges.
