Chop the green tomatoes, bell peppers, and onions.
In a large pot, combine the chopped vegetables.
Add salt and let the mixture sit for about 30 minutes.
Rinse the vegetables with cold water to remove excess salt.
In a separate pot, bring vinegar, sugar, and spices to a boil.
Add the vegetables to the boiling vinegar mixture.
Stir well and bring it to a simmer.
Simmer for about 20-30 minutes until the vegetables are tender.
Pack the chow chow into sterilized jars while hot.
Seal the jars and let them cool completely before storing.
