Ingredients

  • 1 cup split peas
  • 1 can diced tomatoes
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 carrot diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Rinse the split peas under cold water and set aside.
  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add diced bell pepper and carrot, cooking until softened.
  • Pour in the diced tomatoes and stir well.
  • Add the rinsed split peas to the mixture.
  • Sprinkle cumin and paprika, mixing thoroughly.
  • Add 4 cups of water, bring to a boil, then reduce heat.
  • Simmer for 25-30 minutes, stirring occasionally, until peas are tender.
