Ingredients

  • 2 cups green tomatoes chopped
  • 1 cup bell peppers chopped
  • 1 cup onions chopped
  • 1 tablespoon salt
  • 2 cups vinegar
  • 1 cup sugar
  • 1 tablespoon mustard seeds
  • 1 tablespoon celery seeds
  • 1 teaspoon black pepper

Instructions

  • Chop the green tomatoes, bell peppers, and onions.
  • In a large pot, combine the chopped vegetables.
  • Add salt and let the mixture sit for about 30 minutes.
  • Rinse the vegetables with cold water to remove excess salt.
  • In a separate pot, bring vinegar, sugar, and spices to a boil.
  • Add the vegetables to the boiling vinegar mixture.
  • Stir well and bring it to a simmer.
  • Simmer for about 20-30 minutes until the vegetables are tender.
  • Pack the chow chow into sterilized jars while hot.
  • Seal the jars and let them cool completely before storing.
