Rinse the rice under cold water until the water runs clear.
In a medium saucepan, heat olive oil over medium heat.
Add the rinsed rice and sauté for 2-3 minutes.
Pour in the water or broth and add salt.
Bring to a boil, then reduce to low heat and cover.
Cook for 18-20 minutes until rice is tender.
Remove from heat and let sit, covered, for 5 minutes.
Fluff the rice with a fork.
Stir in lime juice and zest.
Fold in chopped cilantro gently.
