Ingredients

  • 1 cup long-grain white rice
  • 2 cups water or broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/2 cup fresh cilantro chopped

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a medium saucepan, heat olive oil over medium heat.
  • Add the rinsed rice and sauté for 2-3 minutes.
  • Pour in the water or broth and add salt.
  • Bring to a boil, then reduce to low heat and cover.
  • Cook for 18-20 minutes until rice is tender.
  • Remove from heat and let sit, covered, for 5 minutes.
  • Fluff the rice with a fork.
  • Stir in lime juice and zest.
  • Fold in chopped cilantro gently.
