Marinate the chicken breasts in coconut milk, curry powder, garlic, and ginger for at least 30 minutes.
Preheat the oven to 375°F (190°C).
Heat a skillet over medium heat and add a splash of oil.
Remove the chicken from the marinade, reserving the marinade for later.
Sear the chicken in the skillet for 3-4 minutes on each side until golden brown.
Transfer the chicken to a baking dish and pour the reserved marinade over it.
Bake in the oven for 20-25 minutes or until the chicken is cooked through.
Check the internal temperature; it should reach 165°F (75°C).
Remove from the oven and let it rest for 5 minutes.
Garnish with fresh cilantro and serve with lime wedges.
