Ingredients

  • 4 boneless skinless chicken breasts
  • 1 can 400 ml coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Marinate the chicken breasts in coconut milk, curry powder, garlic, and ginger for at least 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • Heat a skillet over medium heat and add a splash of oil.
  • Remove the chicken from the marinade, reserving the marinade for later.
  • Sear the chicken in the skillet for 3-4 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish and pour the reserved marinade over it.
  • Bake in the oven for 20-25 minutes or until the chicken is cooked through.
  • Check the internal temperature; it should reach 165°F (75°C).
  • Remove from the oven and let it rest for 5 minutes.
  • Garnish with fresh cilantro and serve with lime wedges.
