Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 2 tablespoons honey optional

Instructions

  • Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  • In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • In another bowl, whisk together milk, vegetable oil, and egg until well mixed.
  • Pour the wet ingredients into the dry ingredients and stir just until combined.
  • If using, add honey and mix gently.
  • Fill each muffin cup about 2/3 full with the batter.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  • Remove from oven and allow to cool in the pan for 5 minutes.
  • Transfer muffins to a wire rack to cool completely.
  • Enjoy warm or at room temperature!
