Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk together milk, vegetable oil, and egg until well mixed.
Pour the wet ingredients into the dry ingredients and stir just until combined.
If using, add honey and mix gently.
Fill each muffin cup about 2/3 full with the batter.
Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
Remove from oven and allow to cool in the pan for 5 minutes.
Transfer muffins to a wire rack to cool completely.
Enjoy warm or at room temperature!
