Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together the eggs and cottage cheese until smooth.
Stir in the chopped spinach and diced bell pepper.
Add salt, pepper, and any desired herbs.
Grease a muffin tin with cooking spray or oil.
Pour the mixture into each muffin cup, filling them about 3/4 full.
Sprinkle shredded cheese on top of each egg bite.
Bake in the preheated oven for 20 minutes or until set.
Allow them to cool slightly before removing from the tin.
Serve warm or store for later.
