In a medium bowl, combine cottage cheese and eggs.
Mix well until smooth.
Add flour, baking powder, vanilla extract, salt, and sugar.
Stir until just combined; do not overmix.
Heat a non-stick skillet over medium heat and add butter or oil.
Pour about 1/4 cup of batter for each pancake onto the skillet.
Cook until bubbles form, about 2-3 minutes.
Flip pancakes and cook for another 2-3 minutes until golden brown.
Repeat with remaining batter, adding more butter or oil as needed.
Serve warm with toppings of your choice.
