Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • Butter or oil for frying

Instructions

  • In a mixing bowl, combine cottage cheese, eggs, and vanilla extract until smooth.
  • Add sugar, flour, baking powder, baking soda, and salt to the mixture.
  • Mix until just combined; do not overmix.
  • Add milk gradually to achieve desired pancake batter consistency.
  • Heat a non-stick skillet over medium heat and add butter or oil.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown.
  • Remove from skillet and keep warm in an oven on low heat.
  • Repeat with remaining batter, adding more butter or oil as needed.
