Ingredients

  • 2 pounds russet potatoes
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • Salt to taste
  • Pepper to taste
  • Optional: garlic chives, or cheese

Instructions

  • Peel and cut the potatoes into even chunks.
  • Place the chunks in a large pot and cover with cold water.
  • Add salt to the water and bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Drain the potatoes and let them sit for a few minutes.
  • Return the potatoes to the pot and add butter.
  • Mash the potatoes until smooth.
  • Gradually mix in heavy cream until desired consistency is reached.
  • Season with salt and pepper to taste.
