Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Place the chopped onion and garlic at the bottom of the crockpot.
  • Season the chicken breasts with salt, pepper, and thyme.
  • Lay the seasoned chicken on top of the onion and garlic.
  • Rinse the rice thoroughly and spread it over the chicken.
  • Pour the chicken broth over the rice and chicken.
  • Add the frozen peas and carrots on top.
  • Cover the crockpot and set to low for 6-8 hours.
  • Once cooked, ensure the chicken is fully cooked and rice is tender.
  • Fluff the rice with a fork before serving.
  • Garnish with fresh parsley before enjoying.
