Ingredients

  • 2 medium cucumbers sliced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  • Wash the cucumbers and cherry tomatoes under cold water.
  • Slice the cucumbers into thin rounds.
  • Cut the cherry tomatoes in half.
  • Peel and thinly slice the red onion.
  • Chop the fresh parsley finely.
  • In a large bowl, combine the sliced cucumbers, halved tomatoes, and red onion.
  • Add the chopped parsley to the bowl.
  • In a separate small bowl, whisk together the olive oil and red wine vinegar.
  • Pour the dressing over the salad mixture.
  • Season with salt and pepper to taste and toss everything gently to combine.
