Ingredients

  • 2 medium cucumbers sliced
  • 2 cups cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  • Wash the cucumbers and tomatoes thoroughly under cold water.
  • Slice the cucumbers into thin rounds.
  • Halve the cherry tomatoes and place them in a mixing bowl.
  • Thinly slice the red onion and add to the bowl with tomatoes.
  • Chop the fresh parsley and mix it in with the other vegetables.
  • In a small bowl, whisk together the olive oil and balsamic vinegar.
  • Pour the dressing over the salad mixture and toss gently.
  • Season with salt and pepper to taste, adjusting as needed.
  • Serve immediately or refrigerate for about 30 minutes to enhance flavors.
