Measure out 2 cups of frozen pineapple chunks.
In a blender, add the frozen pineapple.
Pour in 1 cup of coconut milk.
Add 1/4 cup of sugar.
Stir in 1 tablespoon of lime juice.
Include 1 teaspoon of vanilla extract.
Blend on high speed until smooth and creamy.
Scrape down the sides of the blender as needed.
Taste and adjust sweetness if necessary.
Scoop into serving cups and enjoy immediately, or freeze for a firmer texture.
