Ingredients

  • 2 cups frozen pineapple chunks
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract

Instructions

  • Measure out 2 cups of frozen pineapple chunks.
  • In a blender, add the frozen pineapple.
  • Pour in 1 cup of coconut milk.
  • Add 1/4 cup of sugar.
  • Stir in 1 tablespoon of lime juice.
  • Include 1 teaspoon of vanilla extract.
  • Blend on high speed until smooth and creamy.
  • Scrape down the sides of the blender as needed.
  • Taste and adjust sweetness if necessary.
  • Scoop into serving cups and enjoy immediately, or freeze for a firmer texture.
