Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 ounces chocolate for glaze
  • 1 tablespoon vegetable oil

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a saucepan, combine water and butter, bringing it to a boil.
  • Stir in flour and salt, mixing until a dough forms.
  • Remove from heat and let it cool slightly.
  • Beat in eggs one at a time until the mixture is smooth.
  • Transfer the dough to a piping bag and pipe 4-inch lines onto a baking sheet.
  • Bake for 20-25 minutes until golden and puffed.
  • Let the eclairs cool completely on a wire rack.
  • Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  • Fill eclairs with cream using a piping bag.
  • Melt chocolate with vegetable oil and dip the tops of the filled eclairs.
  • Allow the chocolate to set before serving.
