Ingredients

  • 2 medium eggplants sliced
  • Salt for sweating
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups breadcrumbs
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • Sprinkle salt on the eggplant slices and let them sit for 30 minutes.
  • Rinse and pat the eggplant slices dry.
  • Set up bowls with flour, beaten eggs, and breadcrumbs.
  • Dip each eggplant slice in flour, then eggs, and coat with breadcrumbs.
  • Fry the eggplant slices in oil until golden brown.
  • Spread marinara sauce in a baking dish.
  • Layer fried eggplant slices over the sauce, followed by more sauce and cheeses.
  • Repeat layers until all ingredients are used, finishing with cheese on top.
  • Bake for 25-30 minutes until bubbly and golden brown.
