Ingredients

  • 1 cup rolled oats
  • 1/2 cup nut butter peanut, almond, or sunflower
  • 1/3 cup honey or maple syrup
  • 1/2 cup dark chocolate chips
  • 1/4 cup ground flaxseed
  • 1/2 cup chopped nuts almonds, walnuts, or pecans
  • 1/4 cup shredded coconut optional
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  • In a large mixing bowl, combine the rolled oats, ground flaxseed, and pinch of salt.
  • Add the nut butter and honey (or maple syrup) into the bowl.
  • Mix the ingredients together until well combined.
  • Stir in the dark chocolate chips and chopped nuts.
  • Add shredded coconut if desired and mix thoroughly.
  • Use your hands to form small balls (about 1 inch in diameter).
  • Place the formed energy bites on a baking sheet lined with parchment paper.
  • Refrigerate for at least 30 minutes to firm up.
  • Once set, transfer the bites to an airtight container.
  • Store in the refrigerator for up to a week or freeze for longer storage.
