In a bowl, combine Greek yogurt, honey, and vanilla extract.
Mix until smooth and well combined.
Fold in the mixed berries gently.
Line a muffin tin with silicone liners or use an ice cube tray.
Spoon the yogurt mixture into each compartment, filling them about 3/4 full.
Sprinkle your choice of toppings on top.
Place the muffin tin or tray in the freezer.
Freeze for at least 2 hours or until solid.
Once frozen, remove the bites from the molds.
Store in an airtight container in the freezer until ready to serve.
