Ingredients

  • 2 cups mixed dried fruits raisins, currants, chopped dates
  • 1 cup chopped nuts walnuts, pecans
  • 1 cup unsweetened applesauce
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup orange juice
  • ½ cup brown sugar
  • ½ cup butter softened
  • 3 large eggs

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  • In a mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, beat the softened butter and brown sugar until creamy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in the applesauce and orange juice until combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the mixed dried fruits and nuts gently.
  • Pour the batter into the prepared cake pan and spread evenly.
  • Bake for 75 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
