Ingredients

  • 2 cups mixed dried fruits raisins, currants, apricots
  • 1 cup fresh fruits cherries, blueberries
  • 1 cup chopped nuts walnuts, pecans
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease and line a 9-inch round cake pan.
  • Mix together the dried and fresh fruits with a tablespoon of flour.
  • Cream together the butter and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Sift together the flour, baking powder, cinnamon, and nutmeg; gradually add to the butter mixture.
  • Fold in the mixed fruits and nuts until evenly distributed.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 75 minutes, or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
