Ingredients

  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups gluten free flour blend
  • 1/2 teaspoon cinnamon optional
  • 1/2 cup chopped nuts or chocolate chips optional

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the melted coconut oil to the mashed bananas and mix well.
  • Stir in the sugar (or honey) until fully combined.
  • Beat in the eggs one at a time, then add the vanilla extract.
  • In a separate bowl, whisk together the gluten free flour, baking soda, salt, and cinnamon.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • If desired, fold in nuts or chocolate chips.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick comes out clean.
