In a mixing bowl, mash the ripe bananas until smooth.
Add the melted coconut oil to the mashed bananas and mix well.
Stir in the sugar (or honey) until fully combined.
Beat in the eggs one at a time, then add the vanilla extract.
In a separate bowl, whisk together the gluten free flour, baking soda, salt, and cinnamon.
Gradually fold the dry ingredients into the wet mixture until just combined.
If desired, fold in nuts or chocolate chips.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes, or until a toothpick comes out clean.
