Ingredients

  • 2 lbs beef chuck cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 can 14 oz diced tomatoes
  • 4 cups beef broth
  • 2 carrots sliced
  • 1 bell pepper chopped
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  • Heat vegetable oil in a large pot over medium-high heat.
  • Add the beef cubes and brown them on all sides.
  • Remove the beef and set it aside.
  • In the same pot, add chopped onions and cook until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add paprika and caraway seeds, stirring to release their flavors.
  • Return the beef to the pot and add diced tomatoes and beef broth.
  • Bring to a boil, reduce heat, and let simmer for about 1.5 hours.
  • Add carrots and bell pepper, cooking for another 30 minutes.
  • Season with salt and pepper, and garnish with chopped parsley before serving.
