Wash and scrub the baby potatoes thoroughly.
In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Add the potatoes to the bowl and toss until well coated.
Arrange the coated potatoes in a single layer on a baking sheet.
Roast in the preheated oven for 30-35 minutes, until golden and tender.
Halfway through cooking, shake the pan to ensure even roasting.
Once done, remove from the oven and let cool slightly.
Garnish with freshly chopped parsley before serving.
