Ingredients

  • 1 kg baby potatoes
  • 60 ml olive oil
  • 2 lemons juiced
  • 4 cloves garlic minced
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 200°C (400°F).
  • Wash the baby potatoes thoroughly and cut them in half.
  • In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Add the halved potatoes to the bowl and toss until well coated.
  • Arrange the potatoes cut-side down on a baking tray.
  • Bake in the preheated oven for 30 minutes.
  • Flip the potatoes and bake for another 15 minutes until golden brown.
  • Remove from the oven and let cool slightly.
  • Garnish with chopped fresh parsley.
  • Serve warm and enjoy!
