Ingredients

  • 1 pound fresh green beans trimmed
  • 1 pound baby potatoes halved
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh herbs such as thyme or parsley
  • 1 tablespoon lemon juice

Instructions

  • Wash and trim the green beans, then set aside.
  • Scrub the baby potatoes and cut them in half.
  • In a large pot, bring salted water to a boil.
  • Add the potatoes to the boiling water and cook for about 10 minutes.
  • Once the potatoes are tender, add the green beans to the pot.
  • Cook for an additional 5 minutes until the beans are vibrant and tender.
  • Drain the vegetables and return them to the pot.
  • In a small bowl, mix olive oil, garlic, salt, and pepper.
  • Pour the olive oil mixture over the vegetables and toss gently.
  • Sprinkle with fresh herbs and lemon juice before serving.
