Ingredients

  • 1 pound ground beef
  • 4 medium potatoes peeled and diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: 1 cup mixed vegetables carrots, peas, etc.

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onions and minced garlic; sauté until translucent.
  • Add ground beef to the skillet; cook until browned.
  • Season with salt and pepper, mixing well.
  • Stir in diced potatoes and optional mixed vegetables.
  • Pour in beef broth and bring to a boil.
  • Reduce heat and simmer for about 10 minutes until potatoes are tender.
  • Transfer mixture to a baking dish and sprinkle cheese on top.
  • Bake for 15-20 minutes or until cheese is bubbly and golden.
