Ingredients

  • 2 cups diced cooked ham
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup sweet pickle relish
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Mixed greens for serving

Instructions

  • In a large mixing bowl, combine the diced ham, celery, red onion, and pickle relish.
  • Add the mayonnaise and Dijon mustard to the bowl.
  • Stir in the lemon juice and mix thoroughly.
  • Season with salt and pepper to taste.
  • Fold in the chopped parsley for added flavor.
  • Chill the mixture in the refrigerator for at least 30 minutes.
  • While chilling, prepare a bed of mixed greens on serving plates.
  • Once chilled, give the salad a good stir.
  • Top the mixed greens with generous portions of the ham salad.
