Ingredients

  • 3 ripe bananas mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup walnuts or pecans optional

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Stir in the melted coconut oil until well combined.
  • Add honey (or maple syrup), eggs, and vanilla extract; mix thoroughly.
  • In a separate bowl, combine baking soda, salt, cinnamon, and whole wheat flour.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • If using, fold in the nuts for added crunch.
  • Pour the batter into a greased loaf pan.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
