Preheat your oven to 400°F (200°C).
Rinse and peel the baby carrots if necessary.
In a large bowl, mix honey, olive oil, salt, pepper, and thyme.
Add the carrots to the bowl and toss until well coated.
Spread the carrots in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, stirring halfway through.
Check for tenderness; the carrots should be fork-tender and caramelized.
Remove from the oven and let cool for a few minutes.
Sprinkle with sesame seeds before serving.
Serve warm as a side dish.
