Preheat the oven to 400°F (200°C).
Wash the potatoes thoroughly under running water.
Pierce the potatoes several times with a fork to allow steam to escape.
Rub each potato with olive oil and sprinkle with salt and pepper.
Place the potatoes directly on the oven rack.
Bake for 45-60 minutes, or until the skin is crisp and the inside is soft.
Remove the potatoes from the oven and let them cool for a few minutes.
Cut a slit in the top of each potato and gently squeeze the ends to fluff the insides.
Add butter, sour cream, bacon bits, or your choice of toppings.
Garnish with chives and serve warm.
