Ingredients

  • 4 large russet potatoes
  • Olive oil
  • Salt
  • Pepper
  • Butter optional
  • Sour cream for topping
  • Chives for garnish
  • Bacon bits optional

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash the potatoes thoroughly under running water.
  • Pierce the potatoes several times with a fork to allow steam to escape.
  • Rub each potato with olive oil and sprinkle with salt and pepper.
  • Place the potatoes directly on the oven rack.
  • Bake for 45-60 minutes, or until the skin is crisp and the inside is soft.
  • Remove the potatoes from the oven and let them cool for a few minutes.
  • Cut a slit in the top of each potato and gently squeeze the ends to fluff the insides.
  • Add butter, sour cream, bacon bits, or your choice of toppings.
  • Garnish with chives and serve warm.
