Ingredients

  • 4 cups kale chopped
  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced
  • 1/2 cucumber sliced
  • 1/4 red onion thinly sliced
  • 1/4 cup feta cheese optional
  • 1/4 cup nuts walnuts or almonds
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • Wash the kale thoroughly under cold water.
  • Remove the tough stems from the kale leaves and discard them.
  • Chop the kale into bite-sized pieces and place in a large bowl.
  • Halve the cherry tomatoes and add them to the bowl.
  • Dice the bell pepper and cucumber, then add to the salad.
  • Thinly slice the red onion and add it for extra flavor.
  • If using, crumble feta cheese over the salad.
  • Add nuts for crunch and healthy fats.
  • Drizzle olive oil and lemon juice over the top.
  • Season with salt and pepper to taste, then toss gently to combine.
