Ingredients

  • 1/4 cup basmati rice
  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons ghee
  • 1/4 cup chopped nuts almonds, cashews, pistachios
  • 2 tablespoons raisins
  • 1/4 cup grated coconut optional
  • Pinch of saffron strands optional

Instructions

  • Wash the basmati rice thoroughly under running water and soak it for 30 minutes.
  • In a heavy-bottomed pan, heat ghee over medium heat.
  • Add the soaked rice and sauté for 2-3 minutes until slightly translucent.
  • Pour in the full-fat milk and bring it to a boil, stirring continuously.
  • Once boiling, reduce the heat to low and let it simmer for 20-25 minutes.
  • Add sugar and stir until dissolved.
  • Mix in the cardamom powder, nuts, and raisins.
  • If using, add saffron strands and grated coconut for extra flavor.
  • Cook for another 5-10 minutes until the kheer reaches a creamy consistency.
  • Remove from heat and let it cool slightly before serving.
