Wash the basmati rice thoroughly under running water and soak it for 30 minutes.
In a heavy-bottomed pan, heat ghee over medium heat.
Add the soaked rice and sauté for 2-3 minutes until slightly translucent.
Pour in the full-fat milk and bring it to a boil, stirring continuously.
Once boiling, reduce the heat to low and let it simmer for 20-25 minutes.
Add sugar and stir until dissolved.
Mix in the cardamom powder, nuts, and raisins.
If using, add saffron strands and grated coconut for extra flavor.
Cook for another 5-10 minutes until the kheer reaches a creamy consistency.
Remove from heat and let it cool slightly before serving.
